With the fantastic response to the previous events we may make it a &#8220;seasonal event&#8221; and theme this next event to our cooler months. I&#8217;m sure our freaky Friday brews like &#8220;Christmas Pudding Stout&#8221;, &#8220;Dalmation Dark Ale&#8221;, &#8220;Chilli Chocolate Stout&#8221; will fit perfectly along side the Pump House standards like &#8220;Honey Porta&#8221; and &#8220;Thunder Bolt Strong Ale&#8221;. There may be an opportunity for a collaborative brew as well. Watch this space for details. Cheers!]]></content:encoded>

			<content:encoded><![CDATA[Following many recent discussions regarding an adequete definition for the term &#8220;Craft Beer&#8221; I figure I should add my own definition to the already confused list. Like everything in life it is open for discussion.

It may surprise some folks but I don&#8217;t thing that the size of the brewery matters, ownership by off shore or corporate interests, specific ingredients listings, traditional or a high tech. approach.  My definition is much simpler. 

&#8220;All beer must be batch brewed and at sale gravity&#8221;. 

The two facets here will need to be explained to some but the relevance is obvious to brewers.

Batch brewing requires that the primary fermenters and brew kettle are the same size and as such each &#8220;brew&#8221; must stand on its own merit and  is not blended for a homogonised final product. 

This requires a skilled and dedicated brewing staff and a more &#8220;hands on&#8221; approach to achieve a consistant product. This is the most traditional method and has performed well for over 5000 years.

Sale gravity brewing prevents high gravity brewing processing to be performed. The high gravity technique involves the production of a high sugar content wort stream, fermentation with a super charged yeast to produce product at 7.5 &#8211; 8% ABV. These brews are then diluted to a more appropriate level for consumption. 

This method is almost universally performed in industrial brewing and has the advantage of &#8220;squeezing&#8221; more beer out of the brewery. The disadvantages are the high fusal alcohol levels produced, the need to add yeast performance additives, adjunct use is generally increased to achieve the higher gravity and a major decrease in the &#8220;charictor&#8221; of the beers.

By producing beer at &#8220;sale gravity&#8221; you are retaining the traditions of brewing, the craft, the need to utilise syrup adjuncts is removed, traditional yeast strains and handling techniques are used and true &#8220;beer charactor&#8221; is retained.

This simple definition prevents any missrepresentation by corporate brewing. It is almost impossible to fullfill these critiria at a major industrial plant while small scale local operators generally fit this definition with ease, regardless of product formulations, brewery capacity,  etc. 

I have stopped using the term &#8220;Craft Brewing&#8221; to define this brewery as it&#8217;s meaning has lost its relevance within our market place. I&#8217;m an &#8220;artisan&#8221; brewer now. Cheers! ]]></content:encoded>
